Gueho, restaurant l&#8217;Atlantide, 1 star Michelin.&nbsp;<\/em><\/p>\n\n\n\n<p><strong>Ingredients: Makes 6 to 8 servings<\/strong><\/p>\n\n\n<ul>\n<li>10 shallots<\/li>\n<li>2 teaspoons&nbsp;of wine vinegar<\/li>\n<li>2 teaspoons&nbsp;of muscadet wine<\/li>\n<li>2 tablespoons of double cream<\/li>\n<li>500 gof half-salted butter<\/li>\n<li>ground black pepper<\/li>\n<\/ul>\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n<ol>\n<li>Finely chop the shallots<\/li>\n<li>In the frying pan, boil together the shallots, the vinegar, the muscadet and the ground black pepper.<\/li>\n<li>Leave it on a low heat and then slowly let it reduce.<\/li>\n<li>Add the double cream and bring it back to the boil.<\/li>\n<li>Mix in the cold butter cut&nbsp;in pieces.<\/li>\n<li>Whisk the butter energetically into the sauce.
